Spinach & Three Cheese Muffins

1 3/4 c all-purpose flour

1 T sugar

2 1/2 t baking powder

1/2 t salt

1 c grated or shredded Kraft sharp cheddar cheese

1 c shredded Kraft mozzarella cheese

1 c shredded mexican style quesadilla melting cheese

1 c fresh spinach, sliced thinly

                                                   1 egg

                                                     1 c milk

                                                          1/4 c melted butter

Preheat your oven to 350. In a large bowl sift flour, sugar and baking powder. Add salt and all 3 cheese, stir until the cheeses are coated by the dry ingredients. Add fresh spinach, stir again until it is also coated. Whisk the egg into the milk and add to the mixture. Add the melted butter and stir until completely mixed in. Place into a buttered muffin pan and bake between 20 and 25 minutes.    Yields 11 to 12 muffins.
