Quick and Easy Vegetable Soup

  • 1 Tb unsalted butter (Paleo followers omit this ingredient)
  • 1 Tb Olive Oil (Paleo followers increase this ingredient to 2 Tb)
  • 1 large onion, chopped
  • 2 potatoes, chopped, skin on
  • 2 carrots, chopped
  • 3 cups broccoli, chopped, peel the stems and chop them too
  • 2 stalks celery, chopped
  • 2 or 3 cloves garlic, minced
  • 2 cups hominy, or 1@15oz can drained
  • 6 cups chicken or vegetable broth
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 2 fresh bay leaves
  • salt (Paleo followers omit this ingredient or substitute with refined sea salt)
  • black pepper

Heat a large stock pot over medium heat. Once the pot is hot melt the butter into the Olive Oil. Add the onion and garlic sprinkle with salt and black pepper and saute until they are soft. Add the rest of the ingredients, stir well. Cover the pot and bring to a boil, then reduce heat to medium-low and simmer for 30 minutes. Discard bay leaves, season with salt and black pepper to taste and serve.

Suggestions: I like to serve this with my Sweet Corn & Green Onion Corn Bread. Try putting leftover Pork Roast in this soup, its delicious. You also could add any leftover vegetables in your refrigerator to this soup and do very well.
