Ingredients: yields 12 muffins
- 2 Tb Olive Oil
- ½ white onion, diced
- 1 cup milk
- 2 egg
- 3 cups Bisquick
- 1/2 cup cheddar cheese
- 1 Tb butter, salted
- 1 Tb “Seasoned Butter with Garlic & Parsley “see my recipe”
- 1 cup “Seasoned Stromboli Meat” see my recipe
- 1 cup “Pizza Sauce” see my recipe
- 1 cup Mozzarella/Provolone Cheese Mix, shredded
In a medium bowl combine 1 cup Stromboli meat mixture, 1 cup pizza sauce and 1 cup of the mozzarella/provolone cheese mix. Stir well and set aside, this mixture will be used in the center of the muffin assembly.
Preparing the muffin mixture, in a small skillet sauté the onions in the Olive Oil over medium heat. In a large bowl combine the sautéed onions, milk, egg, Bisquick and cheddar cheese. Mix thoroughly.
In a small skillet over low heat melt the salted butter with the butter seasoned with Garlic & Parsley.
Assembling the muffins. Spray a muffin pan with Pam Spray or grease them with butter. Fill the muffin cup about 1/3 full with the muffin mixture. With your fingers make a well in the mixture and add 1 Tablespoon of the Stromboli mixture. Then top this mixture off with a spoonful of the muffin mixture, again with your fingers spread the mixture to seal it along the sides. You should now have a full muffin cup.
Drizzle the butter mixture over each muffin. Bake for 15 to 20 minutes until they are golden brown.
