Skillet Breakfast Casserole

Ingredients:  serves 2 – 3 people

  • 3 to 4 slices of bacon, roughly chopped or cut
  • 2 potatoes, peeled, sliced and rinsed
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 2 to 3 eggs
  • garlic salt
  • cracked black pepper
  • cheddar cheese mix
  • spinach, shredded (optional)
  • Parmesan cheese (optional)

Preheat oven 350.

In a large skillet over medium heat lightly brown the bacon pieces. Add the potatoes, stir well into the browned bacon, cover and cook for 7 minutes, until the potatoes are softened and starting to brown slightly. Add the onions, garlic and green onions, mix well. Season with garlic salt and cracked black pepper and toss. Remove skillet from heat and spread the potato mixture over the entire bottom. Crack the eggs over the potato mixture and put in the oven to cook for 15 minutes. At the end of this time the eggs may look raw, but check them out, they’re completely cooked. Sprinkle with the desired amount of cheese mixture and return to the oven to continue to cook for 10 more minutes until the cheese is melted and bubbly.

Suggestions: Try substituting the cheddar cheese mix with shredded spinach and Parmesan cheese. I like to divide the potato mixture between 2 individual cast iron skillets, crack the eggs in them so that I have single serving casseroles for my boyfriend or guest. It makes the breakfast a bit more special.
