Southern Green Beans (Quick & Easy and Slow Cooking methods)

Ingredients: 4 servings

  • 12 oz green beans, fresh cleaned & snapped, or frozen ready to use
  • 1/2 onion, chopped or sliced
  • 1 clove garlic, minced
  • 3 slices bacon, cooked and crumbled
  • 1 Tb butter, unsalted
  • 1 Tb Olive Oil
  • 2 cups chicken broth

Quick & Easy method:

Over medium heat in a small stock pot melt the butter into the Olive Oil. Add onions, garlic and bacon saute until soft. Stir in the green beans cover with chicken broth and bring to a boil over medium-high heat. Reduce heat to low, cover the pot and simmer for 30 to 40 minutes, until the green beans are soft.

Slow Cooking method (more of the traditional way of cooking):

In this method substitute 3 slices of raw bacon, chopped for the cooked bacon. It will bring great flavor to the slow simmered green beans. Omit the butter and Olive Oil for this cooking method. Combine the green beans, onions, garlic, raw bacon and chicken broth your crock pot. Make sure they are thoroughly mixed. Cook over low heat all day, at least 6 hours. Stir at least once during this cooking process. Once the green beans are extremely soft, and possibly mushy they are done. Season with salt and pepper and enjoy. (Now you can also use the slow cooking method on your stove top. Use a small stock pot, cook over the lowest heat available for at least 6 hours, stirring a couple of times during this process.)

Suggestions: If you don’t tell anyone and use the Quick & Easy method, no one will notice. My boyfriend kept asking me to cook his green beans following the southern style recipe. I had no idea what he was talking about. The next time we were in the butcher shop I asked the butcher’s wife, as I do with a lot of southern recipes and she gave me the slow cooking way, then pulled me aside and gave me the quick & easy and swore my boyfriend would never be able to tell the difference. She said to me, “Why do you want to cook these all day when you can be done with them in less than an hour?) She was completely right and I have been using the Quick & Easy method since, except for on Thanksgiving when I need to stove top space.
