Rum Glaze and Marinade

16 Feb

This is a fabulous glaze with Sweet Potatoes, but I also love it as a marinade for salmon before baking. Try it as a glaze for grilled chicken or pork.

  • 4 Tb Rum
  • 4 Tb butter, unsalted
  • 3/4 cup light brown sugar, packed
  • 1/8 tsp each, cinnamon, allspice, nutmeg and ginger

In a medium sauce pan combine the all of the ingredients. Over medium heat, whisk until the sugar is completely dissolved and the mixture starts to thicken. Raise the heat to medium-high and continue to whisk until the glaze is thicken to the consistency that would stick to the back of a spoon. The mixture is now ready to use as marinade or as a glaze for meat.
