- 2 Cornish Hens
- 2 Tb salt
- 2 tsp paprika
- 1/4 onion, finely grated
- all-purpose meat seasoning, or salt & pepper
- 4 Tb butter, salted
- 4 Tb butter, unsalted
- 1 tsp garlic salt
- 1/4 tsp thyme, crushed
- 1/8 tsp dill, crushed
- 2 cloves garlic, minced
Combine the salt, paprika and onion, rub all over the Cornish Hens. Slip them into a gallon zip lock bag, add enough water to cover and refrigerate to marinade for at least 3 hours.
Preheat oven 375. Prepare a broiling pan by lining the bottom part with Foil and spray the top grid with Pam Spray.
Remove the Cornish Hens from the marinade, pat dry, then rub the all-purpose meat seasoning lightly over the entire hen. In a small sauce pan melt the salted and unsalted butter together then stir in the garlic salt, thyme, dill and minced garlic. Place the hens breast side up on the grid portion of the broiling pan, brush with the melted butter mixture, roast for 30 minutes, basting once at the 15 minute mark.
Turn the oven down to 350 and continue to roast for 1 hour to 75 minutes more, continuing to baste every 15 to 20 minutes. I realize it’s a lot of basting, but it’s so worth it, I promise.
