- 1 pound ground beef
- 1/2 onion, finely grated
- 2-3 cloves garlic, minced
- 1/3 cup Chipotle chiles in adobo sauce, minced
- 1/3 cup fresh cilantro, finely chopped
- 1 tsp kosher salt
- 1/8 tsp black pepper
- 1/8 tsp ground cumin
Mix all ingredients thoroughly, cover and refrigerate for at least 30 minutes before cooking. Prepare your broiling pan by lining the bottom with foil and spraying the top grid with Pam Spray. Use your hands to form the meat mixture into 4″ x 1″ rectangular shaped patties. You’ll get between 6 to 8 of these patties. Broil on low for 8 minutes on the first side, then turn the patties over and broil for 5 minutes on the second side. Slice the patties across the bias and serve in a tortilla.
Suggestions: Whether the tortillas are flour or corn I love them fried for tacos. But using soft warm tortillas will also be delicious with this taco meat. My “Sweet Corn Salsa” is an excellent addition to this meat, then I always love to top with a Mexican blended cheese and freshly sliced avocados.
