Sweet Corn Salsa

Ingredients:  yields about 5 cups

  • 2 cups fresh sweet corn kernels, rinsed and drained. (can substitute with frozen)
  • 4 Roma tomatoes, cored, seeded and diced
  • 3 green onions, thinly sliced
  • 1/4 red onion, diced
  • 2 Tb fresh cilantro, finely chopped
  • juice of 1 lime
  • Kosher Salt, for seasoning, optional
  • Cracked Black Pepper, for seasoning

Mix all ingredients and season with Kosher Salt and Cracked Black Pepper. Cover and refrigerate for at least 30 minutes before serving or freezing.

Suggestions: Serve this salsa with some homemade corn tortilla chips, just wonderful. This salsa is a great addition to my “Chipotle Beef Taco Meat”, its sweet taste balances the spiciness of the meat. Try it, you won’t be sorry.
