Pigs in a Pancake Muffin

This idea was not mine. My friend Kathie gave me this idea, all I did was put the recipe together using a Bisquick pancake recipe. Tasty and fun, kids and adults will be surprised from the first bite.

Ingredients:    8 muffins

  • 1/4 pound ground sausage
  • 2 cups Bisquick mix
  • 1 cup milk
  • 2 eggs
  • 2 Tb sugar
  • 2 tsp baking powder
  • 1 tsp vanilla

Preheat oven to 450.

Flatten the ground sausage to about 1/4″ thickness then using a shot glass cut out 8 sausage patties. Heat a small skillet over medium heat and fry both sides of the sausage until lightly browned, and set them aside.

Butter your muffin tins, combine the Bisquick mix, milk, eggs sugar, baking powder and vanilla, stirring until blended. Fill the tins 3/4 full with the batter. Add a sausage patty to each tin, press down slightly into the batter. Bake for 10 minutes until golden brown. Serve with butter and syrup.

      Thanks Honey, not sure they are the best, but a great breakfast for you that’s sure. Combining pancakes with sausage, there was no way that could go wrong.
