Chili Cheese Dogs (Leftover Delight)

Well it’s cold outside, we’ve been busy and I am wanting a quick, yet yummy dinner. Looking in my freezer I take stock of my leftovers. I see frozen Chili, hot dogs and buns. Just warming these items up won’t do when I can add a bit more love and create a Leftover Delight.


  • Frozen Leftover Chili, defrosted
  • Frozen Leftover hot dogs, defrosted
  • Frozen Leftover hot dog buns, defrosted
  • 4 Tb butter
  • onion, diced
  • shredded sharp white and yellow cheddar cheese

In a small skillet melt 2 Tb of butter. Brush this butter over the face side of the hot dog buns. Over medium heat return the buns, face side down into the skillet and cook until they are browned. Turn them over and brown the outside just a bit.

In a second small skillet over medium heat melt the remaining 2 Tb of butter. Slice the hot dogs lengthwise, but not completely apart. Open the hot dog up and place cut face down into the skillet and cook these also until browned, flip over and brown the other side.

In a medium sauce pan warm the Leftover Chili, or microwave it.

Assembly is a breeze. Bun, hot dog, chili, onions and cheese. Get your fork and knife out, you will need it.
