Bananas & Pralines Breakfast Cake

Yum, Yum, Yum, this breakfast cake is so yummy. What a delicious way to start the day.

Banana Breakfast Cake Ingredients:

  • 1 stick salted butter (1/2 cup), at room temperature
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups flour, sifted
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 ripe bananas, mashed

Praline Topping Ingredients:

  • 1 stick salted butter (1/2 cup), at room temperature
  • 1/2 cup light brown sugar, packed
  • 3/4 to 1 cup pecans, chopped
  • 1 Tb corn syrup
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg

Preheat oven to 350 and butter a cake pan or 9×9 square baking dish.

In a small mixing bowl combine all of the Praline Topping ingredients and set aside. I use a pastry cutter, it makes easy work of this.

In a large bowl, combine the butter and sugar until blended well. Stir in the salt, eggs and vanilla. Add the flour baking soda, baking powder and bananas and mix well. Pour this mixture into the cake pan or baking dish. Dot with penny size amounts of the praline topping until it covers the batter. Bake for 50-60 minutes until a toothpick comes out clean when pierced in the middle of the cake.
