Baked Apples with a Praline Topping (Paleo)

This recipe was completely inspired by my friend who follows the Paleo lifestyle of eating. She has a wonderful group page on Facebook @ ….if you are Paleo, try joining her page. For us…. I thought hey I use so much organic fruits, veggies and meat in my recipes without categorizing them as such so why not try developing some recipes that are completely organic. Only the best will make it to my blog and this one is absolutely wonderful.

Ingredients:   Serves 2 people

  • 1 green apple, halved, cored & seeded (or use any type of apple you love)
  • 1/4 cup Organic Coconut Palm Sugar
  • 1/4 cup Organic Honey
  • 1/4 cup Pecans, chopped
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg

Preheat oven to 375

After halving, coring and seeding your apple, take a little more meat from the center making a slight well there. Combine the Coconut Sugar, Organic Honey, Pecans, cinnamon and nutmeg. Make sure they are mixed very well. Place the mixture in the center well you have made in the apple, then mound more of the mixture over the top of the halved apple. Place in a loaf pan, add just enough water to the pan to measure about 1/4″ inch up on the sides. Cover with foil, bake for 15 minutes, remove the foil and bake for an additional 15 minutes. Serve hot or warm.

Suggestions: Sprinkle a bit of crumbled cooked bacon on top after it comes out of the oven and you have a very yummy breakfast. If you want more apple, then cut the top off of the apples, core them, stuff the mixture into the hole, place the top back on and bake using the same method as above. But don’t forget to increase the ingredients.
