Cheese Sauce

  • 2 Tb unsalted butter
  • 2 Tb flour
  • 1/4 tsp salt
  • 1/8 tsp ground pepper
  • 1 cup whole milk
  • 2 tsp dry mustard
  • 1 Tb Worcestershire sauce
  • 1/2 cup Monterey Jack Cheese
  • 1/2 cup Colby Cheese
  • 1/2 cup Sharp Cheddar Cheese

Over low heat using a heavy bottom medium sauce pan melt the unsalted butter. Sprinkle the flour over the melted butter, increase heat to medium. Using a wooden spoon stir until the mixture is smooth and bubbly. Remove from heat and stir in the milk, return to heat and bring to a boil. Stirring constantly boil for 1 minute until thicken. Remove from heat again, add the dry mustard, Worcestershire sauce and all the cheese. Stir well until the cheeses are fully melted.

Suggestions: Use this sauce in my “Macaroni & Cheese for Two” recipe. Also try drizzling this sauce over broccoli, asparagus or cauliflower.  After the cheese is melted return to medium heat and cook while stirring a bit more until it has thicken more, then use as a cheese sauce over nachos. Try using only Sharp Cheddar Cheese for a basic cheese sauce.
