Broccoli with Cheese Sauce


  • 2 small heads broccoli, steamed (or 1 big head of broccoli)
  • 2 Tb unsalted butter
  • 2 Tb flour
  • 1/4 tsp salt
  • 1/8 tsp ground pepper
  • 1 cup whole milk
  • 2 tsp dry mustard
  • 1 Tb Worcestershire sauce
  • 1/2 cup Monterey Jack Cheese
  • 1/2 cup Colby Cheese
  • 1/2 cup Sharp Cheddar Cheese

Over low heat using a heavy bottom medium sauce pan melt the unsalted butter. Sprinkle the flour over the melted butter, increase heat to medium. Using a wooden spoon stir until the mixture is smooth and bubbly. Remove from heat and stir in the milk, return to heat and bring to a boil. Stirring constantly, boil for 1 minute until thicken. Remove from heat again, add the dry mustard, Worcestershire sauce and all the cheese. Stir well until the cheeses are fully melted. Drizzle over the steamed broccoli and serve immediately.

Suggestions: Use this cheese sauce in my “Macaroni & Cheese for Two” recipe. Or after the cheese is melted return to medium heat and cook while stirring a bit more until it has thicken more, then use as a cheese sauce over nachos. Try using only Sharp Cheddar Cheese for a basic cheese sauce.
