Ingredients: serves 4 people
- 2 sweet potatoes, peeled, halved, then each half quartered.
- 3/4 cup dark brown sugar or Organic Coconut Palm Sugar
- 1/3 cup maple syrup
- 8 slices of bacon, each cut in half
Preheat your oven to 350 and prepare a broiling pan by spraying the top grate with a non stick spray and lining the bottom with foil.
In a small bowl mix the sugar and syrup until well blended. Coat one side of the bacon with this mixture. Wrap the bacon around the sweet potato piece with the coated side of the bacon slice against the potato. Secure the bacon on to the potato with toothpicks. Bake for 20 minutes, then baste the tops with more of the sugar syrup mixture. Bake for 15 minutes more, then baste again. Bake for another 15 minutes until the bacon is crisp and the sweet potato pieces are soft when pierced.
Suggestions: If you enjoy a bit of heat, add an 1/8 teaspoon of cayenne pepper to the sugar and syrup mixture. I haven’t tried this yet, but would love to add a thick slice of a green apple with the sweet potato and wrap the entire thing up in bacon.
