Savory Scrambled Egg Casserole

Ingredients:   2 to 3 servings

  • 1/3 cup sharp cheddar cheese, shredded
  • 1/3 cup Parmesan cheese, shredded
  • 1/4 cup fresh spinach, chopped
  • 1 TB salted butter
  • 1/4 cup Half & Half
  • 1/2 tsp mustard
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 4 eggs
  • 1 Tb fresh basil, chopped
  • 1 Tb fresh parsley, chopped

Preheat oven to 325

Sprinkle the cheeses over the bottom of a small casserole dish. Top with the chopped spinach, the dot with the butter. Whisk together the Half & Half, mustard, salt and pepper and drizzle 3 tablespoons of this mixture over the cheese and spinach. Add the egg to the remaining liquid mixture and blend well. Pour this mixture into the casserole dish and top with the chopped basil and parsley. Bake for 30 to 35 minutes until eggs are fully cooked, sprinkle with some extra Parmesan cheese and serve.

    Spinach goes so well with eggs, doesn’t it? Not just the taste but the colour contrast too. I like the addition of some mustard. I’ll be trying that!

    Just wanted to let you know this recipe was awesome! Glad I doubled it because it was GONE! We also added some diced tomatoes, and it was sooo good! Thanks again!
