Quick and Easy Blueberry Coconut Pancake Muffin

Blueberry Coconut Pancake Muffin

Ingredients:   yields 12 muffins

  • Your favorite pancake mix recipe
  • a handful of blueberries, washed and drained
  • 1/2 cup of shredded sweetened coconut
  • 1 tsp vanilla

Preheat oven to 450 and butter a regular sized muffin pan.

Prepare you favorite pancake mix stirring the coconut and vanilla into it until well blended. Fill each muffin cup 3/4 full and add 4 blueberries on the top. Bake for about 15 minutes. Serve hot with softened butter and warm syrup.
