- 2 Tb Olive Oil
- 2 Tb unsalted butter
- 2 sweet potatoes, peeled and cubed
- 1 clove garlic, minced
- 2 Tb fresh parsley, chopped
- 2 Tb fresh basil, chopped
- Garlic salt and Cracked Black Pepper for seasoning
Heat a medium skillet over medium heat. Melt the butter into the Olive oil in the skillet, then add the sweet potato cubes and toss well. Cover and cook for about 10 minutes then add the garlic, parsley and basil. Cover and cook for another 10 minutes until the potatoes are soft. Season with the garlic salt and cracked black pepper and serve. I love preparing and serving these potatoes with my skillet fried sweet corn.
