Stuffed Bell Peppers

Ingredients:  yields 4 stuffed peppers

  • 4 bell peppers, washed, cored, tops sliced off, but reserve for baking
  • 1/4 cup white onion, minced
  • 1 large garlic clove, minced
  • 1 pound ground beef
  • 1 new potato, shredded
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp ground oregano
  • 2 tsp Worcestershire sauce
  • 1 tsp mustard
  • 2 Tb Ketchup
  • 1/2 cup bread crumbs
  • shredded Parmesan cheese

Preheat oven to 350.

In a large bowl combine all of the ingredients except the bell peppers. Using a spoon, fill the cavity of each pepper with the meat mixture. Place the top on them and place them in a baking dish standing up. Tent the baking dish with foil and bake for 40 minutes. Uncover and bake an additional 20 minutes. Remove the tops and sprinkle with a bit of Parmesan cheese and serve.

    I love that one and use to cook a similar recipe, but instead of potato and breadcrumbs I mix in some cooked rice. Bon appetit!

      Hi Meggie, rice….that’s what my mom always used. I couldn’t remember what she used, thanks.
