Banana-Peach-Streusel Muffins


  • 1 stick (1/2 cup) butter, room temperature
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup light brown sugar
  • 2 tsp cinnamon
  • 1 1/2 cups plus 2 Tb flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup pecans, chopped
  • 2 ripe bananas, mashed
  • 2 ripe peaches, peeled, seeded, finely diced

Preheat your oven to 350. Line a muffin tin with muffin liners or butter each muffin cup.

In a large mixing bowl stir the butter and sugar until well mixed. Add the salt, eggs, vanilla, light brown sugar, cinnamon and mix until well blended. Sift the flour, baking soda and baking powder together and stir into the mixture. Stir in the pecans, bananas and peaches. Fill each muffin cup 3/4 full and bake about 25 minutes until browned and when touched lightly the tops of the muffins bounces back.
