Creamy Tomato Basil Soup

Creamy Tomato Basil Soup

Ingredients:  6 to 8 servings

  • 4 Tb unsalted butter
  • 1 onion, finely diced
  • 2 carrots, finely diced
  • 2 stalks celery, finely diced
  • 2 Tb flour
  • 8 to 10 vine-ripened tomatoes, peeled & chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • a strong pinch of saffron
  • 1 cup heavy cream
  • 3/4 fresh basil, finely chopped
  • 2 pinches salt
  • 2 pinches ground white pepper
  • 1 tsp sugar
  • grated Parmesan cheese (garnish)

In a stock pot, over medium heat, melt the butter. Add the onion, carrots and celery and saute until the onions softened. Sprinkle the flour over the sautéed vegetables and cook for 5 minutes, stirring frequently. Add the minced garlic and tomatoes, still until they are well coated with the flour mixture. Pour in the chicken broth, add the thyme and bay leaf, stir well.

Increase the heat to medium high and slowly bring to a boil, stirring frequently. Reduce heat to low, cover and simmer for 30 minutes, stirring occasionally. Discard the bay leaf and working in batches puree the soup using a blender or food processor until smooth. Return the pureed soup to the pot. In the same blender add the heavy cream and chopped basil, add about 1/2 cup of the pureed soup. Process until well blended then while stirring add this mixture slowly to the soup in the stock pot. Over low heat re-warm the soup thoroughly. Season with salt, white pepper and sugar. Ladle the Creamy Tomato Basil Soup into warmed bowls, garnish with Parmesan Cheese and serve.

Suggestions: Try adding my “Pesto Dumplings” to this soup and watch out. It takes the soup to a whole new level. (When adding the Pesto Dumplings, boil them in chicken broth before adding to individual bowls. The directions are in my “Pesto Dumplings” recipe. It will be posted tomorrow.)
