Our Amish friend is bringing her vegetables and herbs to our little Farmer’s Market in town. Last week she brought some purple basil. I had never tried purple basil before so thought I would make a simple pesto sauce of it. It’s flavor is very mild and delicate with almost a hint of licorice. We both loved it, next on my list, flavoring ice cream with it.
- 1 cup purple basil, firmly packed
- 1 cup fresh parsley
- 3/4 cup grated Parmesan Cheese
- 3 to 5 cloves garlic
- 1/4 cup Olive Oil
- 1 tsp Kosher salt
- 1/4 tsp black pepper
Using my food processor I combined all of the above ingredients and pulsed until the mixture is smooth. Place in a tight container and refrigerate until needed or as I did, place in a freezer zip lock baggy and freeze for the future.
