Cinnamon, Sugar & Berry Popovers

I’ve seen quite a few cinnamon & sugar popover recipes out there and I love those popovers, but why not really make them special by adding some berries. In this recipe I have added Blackberries but any kind of berry will work.

Ingredients:  yield 12 popovers

  • 4 eggs
  • 1 1/2 milk
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 cup canned blackberry pie filling (I use Comstock pie filling)
  • 3 Tb butter, salted, melted
  • Cinnamon and Sugar mixture for sprinkling (this consist of 1/4 cup sugar mixed with 1 tsp cinnamon)

DO NOT PREHEAT YOUR OVEN!

Butter a muffin tin. In a large bowl beat eggs well with a whisk. Add the milk, flour, salt, vanilla, cinnamon and nutmeg and continue to whisk until well blended. Fold in the blackberry pie filling. Fill the muffin tins 7/8 full and place in the cold oven. Turn the oven on and set temperature for 450. Bake for 30 minutes until the popovers are puffy and browned. They will bake right through the preheating stage, don’t peek, don’t disturb and don’t open the oven door. Remove from the oven and let rest for 5 minutes, don’t be surprised when they fall, that’s what popovers do. Remove the popovers one at a time and brush entirely with the melted butter then sprinkle completely with the cinnamon sugar mixture. Place on a wire rack until ready to serve.

Suggestions: Try substituting cherry, raspberry or strawberry pie filling in this recipe. I was just thinking, I wonder how a lemon or key lime pie filling would taste in this recipe. If anyone tries that please let me know how it works.
